Corn Bread

Everyone needs cornbread sometimes! Nothing goes better with chili on a crisp Fall day, or a cold winter evening….

1/2 C Sorghum Flour
1/4 C rice flour
1/4 C Tapioca Starch
3/4 C cornmeal
2 TBLS maple syrup
1TBLS baking powder
1/2tsp Xanthan Gum
1/2 tsp salt
1 Flax egg (1 TBLS ground flax 2 TBLS water, let set until consistency of egg whites)
1/2 soy milk
1/2 C water
1/3 C vegetable oil

bake for about 20mins at 400* or until a toothpick comes out of the center clean. (either in a 9×9 pan or as muffins.)
